Let’s get cooking with some “Twenty Minute Chicken”. I don’t know about you but the last thing I want to do at the end of a long day is slave in the kitchen. I’m a big fan of simple meals that have easy prep. If you like chicken, this recipe is sure to please. It’s quick, tasty, and will leave you wanting more.
What you’ll need for 2 people:
2 Boneless Chicken Breasts, skinned
1/3 cup Breadcrumbs (I use Italian flavor, or Panko)
2 Tbsp. Parmesan Cheese, grated
2 Tbsp. Olive oil
Salt & Pepper, to taste (I like to use Lemon Pepper)
1 tsp Paprika
Large zip lock bag
Heat oven to 500 degrees. (That’s right, 500º) Line a small baking sheet with foil. Place chicken in zip lock bag and add salt, pepper, and paprika. Sprinkle with the olive oil. Massage the bag to thoroughly coat the chicken.
In a bowl, mix together breadcrumbs and Parmesan cheese. Roll the chicken breasts in the crumbs, making sure they are well coated.
Place on baking sheet and bake for 10 minuets on each side.
(For very large breasts, bake for 12 mins. each side)
Do not bake longer than 20 minutes or chicken will dry out! Inside temperature should be at least 165 degrees.
Chicken will be golden brown, very tender, and moist inside.
I like mine with some mashed potatoes and gravy.
And some vegetables.
I think I’ll add some stuffing too.
And last but not least, some cranberry sauce.
